注射用红色诺卡氏菌细胞壁骨架我省获准生产的抗肿瘤生物制剂,是一种机体免疫调节剂。尽管在新药研发过程中开展了一定的药理药效学研究,但是,对其抗肿瘤的作用机制的研究还是相对不足,在某种程度上制约了该药品的进一步开发。本题的主要目标是通过研究能够较为系统的掌握该药品的主要成分(N-CWS),诱导或激活机体的相关免疫细胞直接杀伤肿瘤细胞或者产生免疫因子提高免疫功能以及N-CWS细胞毒作用肿瘤细胞的机制以及N-CWS已知的可能单体成分激活免疫或抑制肿瘤细胞的机制。

低盐鱼露是十一五国家科技支撑计划重大项目“海洋大宗低值鱼类精深加工技术集成与产业化示范”的一个重要子课题。针对传统鱼露产品含盐量高,发酵时间长,生物胺含量高的缺点,集美大学生物工程学院利用海洋低值水产加工下脚料中特殊的内源蛋白酶,研究低温自溶和深度水解技术以及发酵过程中生物胺控制技术,开发低盐,低生物胺,高营养的发酵鱼露。传统发酵方法需要1年以上才能获得发酵成熟鱼露,利用本技术经3-6个月发酵就可以获得发酵成熟的鱼露。成功制备的低盐发酵鱼露产品中NaCl含量为15%,总氮大于2.0%,游离氨基态氮大于1.4%,挥发性盐基氮含量可以控制在100 mg/100 ml以下。

太平洋牡蛎中天然牛磺酸提取新工艺,国内外主要依靠化学合成和发酵法生产牛磺酸,但化学合成法具有原料毒性大,工艺操作复杂,生产设备投资高,回收困难以及环境污染等问题;而发酵法则存在产量低,产品需进一步纯化,工艺路线长,生产设备投资高等问题。因此,寻找安全的牛磺酸资源十分必要。从天然物中提取牛磺酸长期以来一直是人们关注和研究的热点,国际市场上天然牛磺酸的价格远高于合成品。而传统生物提取法采用酸碱沉淀法除蛋白质,产品含盐量高,纯度低。针对传统生产工艺的缺点,集美大学生物工程学院立足现实加工情况,充分利用牡蛎等水产品的加工下脚料,采用现代膜分离与离子交换等技术,应用于天然牛磺酸的提取,提出了新的工艺流程,以期为生产实践提供理论依据。

利用鱼类下脚料生产可食性胶原蛋白膜

由于可食膜可以与被包装食品一起食用,不会对食品和环境造成污染,近年来已经成为包装材料的研究热点并开始被食品业界所采用。本项目以水产品加工过程中产生的包括鱼骨、鱼皮、鱼鳞废弃物为原料,提取胶原蛋白制备成可食性/可降解性蛋白膜。相对大豆蛋白膜、淀粉可食膜,本项目有效利用下脚料资源,原料成本低,制备的蛋白膜为无色,透明度高,氧气阻隔性能好,不会老化,机械强度为25MPa~50MPa,达到OPP塑料膜的水平。如果进一步改良蛋白膜的性能可制备成全降解包装膜,具有替代普通塑料包装膜的潜力。

Low salt fish sauce is an important sub-topic of the key project Deep processing technology integration and industrialization demonstration of marine bulk low-value fish of under 11th Five-year Plan state science and technology supporting plan. In view of such drawbacks of traditional fish sauce products as high salt content, long fermentation time, high content of biogenic amines, College of Biological Engineering, Jimei University utilizes the special endogenous protease in the leftovers of marine low-value aquatic product processing, to study low temperature autolysis and hydrolysis technology as well as biogenic amines control technology in the process of fermentation to develop fermented fish sauce with low salt, low biogenic amine and high nutritional value. Traditional fermentation method needs more than one year to get mature fermented fish sauce, but the duration will be shortened to3-6 months by using this technology. In the successful preparation of low-salt fermented fish sauce, the NaCl content is 15%, more than 2.0% of total nitrogen, free amino nitrogen is more than 1.4%, the volatile base nitrogen content can be controlled below 100 mg / 100 ml.

As for the technology of extracting natural taurine from the Pacific oyster, it mainly relies on chemical synthesis and fermentation at home and abroad, but the chemical synthesis method has such problems as toxic raw materials, complex processing operation, large investment in production equipments, difficulty in recycling and environmental pollution, etc.; And fermentation method has low yield, and the fermented products need further purification with long processing line and large investment in production equipments. Therefore, it is necessary to look for the safe taurine resource. To extract taurine from natural material has long been a concern and focus of research, and in the international market, the price of natural taurine is much higher than that of the synthetics. Traditional biological extraction applies the acid-base precipitation method to realize the high protein and salt content, but low purity. Specific to the disadvantages of the traditional production process, College of Biological Engineering, Jimei University, based on the real processing condition, makes full use of oysters and leftovers of other aquatic products, and applies such modern technologies as membrane separation and ion exchange in extracting natural taurine, putting forward a new technological process to provide theoretical basis for production practice.

The production of edible collagen by fish leftovers

In recent years, the edible membrane, eaten with packaged food, which will cause no contamination for food and environment, has become a hot research topic of packaging materials and began to be adopted by the food industry. The project takes such leftovers as fish bones, skin, and wastes in the processing of aquatic products as raw material to extract collagen and prepare edible protein/biodegradable protein membrane. Compared to soy protein and edible starch membrane, this project uses  the leftovers effectively with low cost of raw material, and the preparation of protein membrane is colorless, transparent and aging-free with good oxygen barrier performance, whose mechanical strength is 25 mpa ~ 50 mpa,  which reaches the level of OPP plastic membrane. And the further improvement of the performance of protein membrane can prepare the perfectly degradable packaging membrane, with the potential to replace common plastic packaging membrane.
